Fruit Puff Pancake!Chris Adams Fruit Puff Pancake featured breakfast at The Little House Guest Cottage

4 T. Butter
1/4 cup maple syrup
Cinnamon
2 cups sliced fresh fruit such as apples or peaches
or fresh blueberries
4 eggs, separate whites and yolks
1/2 cup whole milk or cream
1/2 cup flour
1/2 tsp baking powder
2 T. sugar

Preheat oven to 400 degrees.
Melt butter in an oven proof dish. Place fruit in melted butter. Drizzle with maple syrup. Sprinkle with cinnamon. Place fruit in the oven for 10 Minutes. In a separate bowl stir together flour and baking powder. Add milk to flour and mix well. Whisk egg whites with sugar. Carefully fold whites into flour mixture. Gentle pour batter over bubbling fruit. Bake in the oven for 20 minutes until done.

To serve place a large plate over the baking dish. Invert the puff pancake onto a serving plate. Garnish with fresh fruit. Serve with butter and syrup.
